My Simple Salmon & Sushi Rice Supps









This dish is such a quick and perfect supper party SOS, or just a simple mid week healthy dish. I'm thoroughly addicted!


All you need is:


1 Salmon fillet

2 tbsp soy sauce
1 tbsp sesame seed oil
1 tsp runny honey
Pepper
Bunch of coriander


(for the rice)
1 cup of White sushi rice
2 cups of water (same cup size as for the rice)
2 tbsp Mirin
2 tbsp rice vinegar
3 tbsp sushi vinegar (I use Mizkan sushi seasoning vinegar from Japan Centre)

Preheat oven at 200 C.
Rinse the sushi rice off under cold water in a sieve, then place in sauce pan, using the same cup that you measured one cup of rice, put two cups of water over the top of the rice. Put the lid on and bring to the boil, then turn the heat down and keep boiling for 15 minutes - at no point lift the lid!! Then take off the heat and leave to sit for 25 minutes, with the lid on at all times - DO NOT lift it off - this is the trick!! ;)

Simply pop the salmon fillet on a large sheet of foil, on a baking tray and then splash the soy sauce, sesame seed oil, pepper and honey over the fish then bring all the sides of the foil paper together and pinch them, so the fish is sitting in a kind of foil parcel.

Place in the oven for 20 mins.

Once the rice looks like it has little holes in it and has absorbed all the water, place in a ceramic boil, then add the Mirin and Vinegars. Stir carefully in.

Serve in your favourite bowl! Place the salmon on top of the rice with an extra little splash of soy sauce and large handful of coriander... Enjoy!!!


I adore this dish, it's heart warming and super simple. The rice is the longest part so if you don't have time just use brown or white normal rice.
